Caramel Apple Cake

Caramel Apple Cake

Ingredients

  • 1 1/2 cups packed (175g) CBF MixQuick
  • 2/3 cup granulated sugar
  • 1/2 cup non-dairy liquid creamer
  • 2 medium cooking apples, peeled and thinly sliced (2 cups)
  • 1 Tbs lemon juice
  • 3/4 cup packed brown sugar
  • 1/2 tsp ground cinnamon
  • 2/3 cup boiling water
  • Scoop of non-dairy frozen topping, if desired

Directions

  • Heat oven to 350 degrees F.
  • Mix CBF MixQuick and granulated sugar in medium bowl. Stir in non-dairy creamer and mix until blended.
  • Pour batter into lightly greased square pan, 8x8x2 inches.
  • Top with apples; sprinkle with lemon juice.
  • Mix brown sugar and cinnamon; sprinkle over apples.
  • Pour boiling water over top. Bake 50-60 minutes or until toothpick inserted in center comes out clean.
  • Serve warm with a scoop of frozen topping.
  • SUGGESTIONS: Try using two cups of drained, canned Apple pie Filling instead of raw apples.
