Caramel Apple Cake

Ingredients
- 1 1/2 cups packed (175g) CBF MixQuick
- 2/3 cup granulated sugar
- 1/2 cup non-dairy liquid creamer
- 2 medium cooking apples, peeled and thinly sliced (2 cups)
- 1 Tbs lemon juice
- 3/4 cup packed brown sugar
- 1/2 tsp ground cinnamon
- 2/3 cup boiling water
- Scoop of non-dairy frozen topping, if desired
Directions
- Heat oven to 350 degrees F.
- Mix CBF MixQuick and granulated sugar in medium bowl. Stir in non-dairy creamer and mix until blended.
- Pour batter into lightly greased square pan, 8x8x2 inches.
- Top with apples; sprinkle with lemon juice.
- Mix brown sugar and cinnamon; sprinkle over apples.
- Pour boiling water over top. Bake 50-60 minutes or until toothpick inserted in center comes out clean.
- Serve warm with a scoop of frozen topping.
- SUGGESTIONS: Try using two cups of drained, canned Apple pie Filling instead of raw apples.
